Eggplant Mini Pizzas

Hey Fabbies! I have another new recipe for you guys! And this recipe, like many of my others, don’t require a lot of ingredients, which I love. Eggplant mini pizzas are so easy to make, and are perfect for kids and adults alike. I first discovered this recipe when I was living in LA and was newly vegan. I would make them often, but it’s been a while since I had made it, and recently I had the ingredients to make some, and they made for the perfect weekend lunch for the family. Let’s dive right into the recipe! You will need:

  • 1 eggplant
  • Your favorite pasta sauce, or pizza sauce
  • Shredded vegan Mozzarella cheese (Daiya is the brand I use)
  • Your favorite pizza toppings: (I typically use cilantro, mushrooms, red onions, tomatoes, jalapeño peppers…you can go crazy here and put whatever you like or whatever you have on hand. This day, I kept it simple since I was making it for the kids. For myself though, I pile on EVERYTHING!)
  • Whatever seasonings you like to cook with: (sea salt, onion powder, smoked paprika, oregano, etc..)

Let’s Cook!

First you slice up your eggplant into slices. (The thickness of each slice should depend on how thick you want your “crust” to be. This will serve as your base.)

Next you begin building your eggplant pizza: First add pasta sauce to each round eggplant slice. I typically add a generous amount because I love saucy foods!

Then begin adding the rest of your toppings, including your vegan cheese, veggies, and whatever else you want to throw on there:

I added cilantro, red onion, and sprinkled seasoning all over

Next, after preheating your oven to 425 Fahrenheit, bake the eggplant mini pizzas for 10-15 minutes, longer if you desire. Let cool and ENJOY!

This recipe is so quick and easy to make, and if you have never tasted eggplant before, this is a great way to introduce eggplant into your diet! Have a great weekend Fabbies!
